The Dish: Grapefruit Fava Bean Summer Salad
1 ½ oz. Baby Arugula
2 oz. Fresh, cleaned fava beans
2 baby carrots (cut 4-way)
1 grapefruit (cut into slices)
1 tbl seasoned gourmet rice wine vinegar
½ tbl extra virgin olive oil
1 pinch salt
1 pinch black pepper
Mix all ingredients. Bon Appetito!
