Recipe:
Ziti all' Amatriciana
Ingredients:
2 ounces DePasquales homemade Ziti2 tablespoons extra-virgin olive oil, divided2 ounces pancetta or unsmoked bacon, sliced, cut into 1x1/4-inch strips, divided.1 garlic clove, peeled1/4 teaspoon dried crushed red pepper flakes1 cup finely chopped onion1 pound cherry tomatoes, (or canned cherry tomatoes) chopped (about 3 cups)4 fresh basil leaves3/4 cup freshly grated Pecorino Romano cheese or Parmesan cheese (about 2 1/2 ounces)
Directions:
Heat 2 tablespoon of oil in a heavy large skillet over medium-low heat. Add garlic and sauté about 2 minutes; Add onion and pancetta and sauté until onion is translucent and fat has rendered from pancetta, about 10 minutes. Add tomatoes; simmer 6 minutes. Season sauce with salt, pepper and red pepper flakes. Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup pasta cooking liquid. Add pasta to tomato sauce in skillet and simmer for about 4-5 minutes. Add cheese and torn fresh basil leaves to pasta and toss, adding some of reserved pasta cooking liquid if dry. Season to taste with salt and pepper. Transfer pasta to bowls and enjoy! (serves 4-6)
