The Dish: Cheddar Meatloaf
Stephi's on Tremont
Meatloaf Recipe:
4# Ground Beef
2 eggs
½ cup caramelized onions (chopped)
¼ cup Soy Sauce
2 oz. Worcestershire Sauce
1 cup ketchup
1 tsp. salt + 1 T
½ tsp. ground black pepper + ½ T
5 cups bread crumbs
1 ½ cups shredded cheddar cheese (to stuff meatloaf)
Pan Spray
Preheat oven to °275. In a large mixing bowl lightly beat the eggs and mix in soy, Worcestershire sauce, ketchup and caramelized onions. Add ground beef, 1 tsp salt, ½ tsp pepper and mix with hands until completely blended. Add bread crumbs and fold until thoroughly mixed. Be careful not to over mix or the meatloaf will become dense. Form mixture into a loaf and with your hand form a cavity a little more than halfway deep going down the center of the loaf. Pour cheddar cheese into the cavity and fold over one side first and then the other side on top of that to form a nice seal so that the cheese doesnt escape while cooking. Lightly spray a ½ sheet pan with pan coating and place meatloaf in center of pan. Coat with remaining salt and pepper and bake for 50 - 60 min. Remove from oven and let stand for 10 min before cutting.
