The Dish: Creative sandwiches at Cutty's

Makes enough for 4 sandwiches
-- 1 ripe avocado, mashed up
-- 8 hardboiled eggs, chopped
-- 2 tablespoon mayonnaise (optional)
-- Salt and black pepper
-- 8 slices high-quality sandwich bread
-- 8 thin slices high-quality ham
1. Using a rubber spatula, combine the avocado, eggs, mayonnaise (if using) in a medium and mix until thoroughly blended. Season this mixture with salt and pepper to taste.
2. To make the sandwiches, spread 4 pieces of bread with about 1/2-cup of the avocado/egg-mixture, lay on 2 slices of the ham, and top off each sandwich with the remaining slices of bread.
NUT BUTTER & FRESH FRUIT SANDWICHES

Makes enough for 4 sandwiches
-- 1 cup salted almond butter, cashew butter, or any nut butter
-- 8 slices high-quality sandwich bread
-- 1/4 cup sliced nectarines or peaches
-- 1/4 cup sliced strawberries
-- 1/4 cup blackberries, raspberries, or any type of berries
Spread 4 pieces of bread with about 1/4-cup of the nut butter; lay on nectarines, strawberries, and berries. Top off each sandwich with the remaining slices of bread.
