RECIPE:

Vegetarian Russian Borsch Recipe

From the first sight Borsht looks like a simple mix of vegetables and meet but in reality it can be made in different ways depending on the chef of the cuisine. Fred Dinov has his own recipe of vegetarian borsht which is really popular in the neighborhood restaurant "Stoli" located in Brookline Village.

Ingredients:

--3 tablespoon Olive Oil
--2 quarters of water
--1 small size cabbage
--Beans ½ pound
--2 medium beets
--3 medium Potatoes
--1 red, 1 yellow, 1 green fresh, medium size pepper
--1 medium onion
--1 carrot
--1 medium rib celery
--4 garlic cloves
--1 medium white part of the leek
--2 table spoon tomato pasta
--1/2 of dry white wine
-- ½ tea spoon of caraway seeds
--Sour Cream
--3 bay leaves
--Scallions, fresh parsley, fresh dill

Method:

It's very important that all vegetables are julienne cut. Julienne is a type of cut that makes long strip, it can be used to make foods look stylish on the plate, and to ensure that foods will be cooked evenly and thoroughly.

1. In a medium pad put 2 quarters of water at the same time put ½ pond red beans and let it boil for 20 min, after put 3 potatoes cubical cut, cover the pad and let it boil for 10 min, after add julienne cut cabbage in a boiling water. While beans and potatoes are boiling prepare a pan with olive oil, let it warm up and in 2-3 min put half cut 5 garlic clove and roast it till golden color of the garlic and put a side, so that olive oil has full garlic flavor.

3. In garlic flavor olive oil put julienne cut onion, red, yellow and green peppers; white part leeks; carrots, celery, 2 tablespoons of tomato paste stir for 5 min on a slow roast, add ½ cup of white wine, ½ teaspoon sugar, see salt, black crushed pepper, let it stir for 10 min on slow roast.

4. Put all sautéed vegetables from the pan into boiling water with beans and potatoes and let it boil together for 15 min and add 3 bay leafs.

5. Take 2 pre-cooked beets julienne cut and put into a pan, stir it time to time, after it boils in 5-7 min add again just a little bit of see salt, black crushed pepper and a little bit of your love!!! Let it set for 15 min and borsht is ready! Now it is very important to serve it with sour cream, scallions, fresh dill and parsley.

So here you go and borsht can be served to your guests!
