The Dish: Dish: Grilled Halibut

Pacific Halibut
Ingredient:
-- Unit Amount Pacific halibut 7 oz portion
-- half pound Jumbo asparagus
-- 7 Egg yolk
-- 1 stick Melted butter ( unsalted )
-- 2 oz Limoncello
-- Drop of Tabasco
-- Salt & pepper to taste
Preparation Instructions:
-- Salt and pepper halibut then grill to desired doneness
-- Grill asparagus
-- In a bowl, combine egg yolk, limoncello, and Tabasco
-- Cook over a pot of boiling water, whipping constantly
-- When firmly set, gradually add butter
-- Serve halibut over asparagus and top the fish with hollandaise sauce
