The Dish: Thai style grilled wings

Chicken Wings
For the Marinade:
-- Wet green chili
-- Chopped garlic
-- Chopped ginger
-- Chopped lemongrass
-- Dry curry
-- Chopped limes
-- Fish sauce
-- Sesame oil
Combine all wet & dry ingredients, add fish sauce & oil until mixture becomes ‘wet’ or plyable
Marinate Wings so a good amount of marinade covers each one. Refrigerate overnight covered.
Next day, you can either grill or oven roast wings:
1) For the oven:
Pre bake oven to 325 – Line a cookie tray with foil, lay wings flat & bake for approx. 30 mins. When wings begin to feel tender, raise heat to 500 & finish until golden brown.
2) For the grill:
Build a fire so one side is hot & the other side warm. Pre-grill wings for about 30 minutes turning every so often until tender. When tender, finish wings on hot side until golden brown.
Serve with cut limes & your choice of hot sauce.
