The Dish: Father's Day Sea Seared Scallops

Recipe: Sea Seared Scallops

Ingredients:

-- 8 large dry fresh sea scallops
-- canola oil
-- salt

Sauce:

-- 1/2 cup grapefruit
-- 1/2 cup lobster stock or chicken broth
-- 6 scallion stems
-- 1/2 a lime
-- cayenne pepper to taste
-- 2 tablespoons brown sugar
-- 1 stick unsalted butter

 

In a small sauce pan Bring the first 4 ingredients in the sauce to a boil and reduce to about 1/4 cup. Strain.

Add as much cayenne as you like and 2 tablespoons brown sugar.

Whisk in the sweet butter 1 tablespoon at a time on very low heat.

1.    Lightly salt the scallops

2.    Heat oil in saute pan until barely smoking

3.    sear the scallops 1 minute per side, until golden brown

 

Shiitake Mushrooms:

sauté shiitake mushrooms in a little butter with some fresh sage.

 

Assemble:

plate a row of mushrooms, overlap with 2 scallops per plate, spoon sauce on the side

of the scallops.
