The Dish: Jerk chicken

Recipe:
Jerk Chicken
-- 5 pounds of cleaned chicken
-- 1/2 tbsp garlic powder
-- 1/2 tsbp salt
-- Lawrie dry all purpose seasoning
-- 1/3 c. jerk sauce
-- 1 TB dry sherry
Prepare:
-- Start by cleaning the chicken
-- then sproinkle on garlic powder and salt and rub in good
-- Let sit 5 hours or overnight
-- then add lawrie dry seasoning
-- Pour on 2 TB dry cooking sherry
-- then, mix in 1/3 c jerk seasoning sauce (or make your own with 1/4 c orange juice, onion, peppers pimento, olive, and island spices) - we use walkerswood seasoning
-- rub in good
-- then line chicken on cooking tray
-- bake at 350 degrees for 1 hour
