The Dish: Ceviche

CEVICHE:
STEP ONE:
-- 4 Oz. shrimp (31-40 shrimp) - Rough chop into ¼ inch pieces
-- .25 cup onion - Add
-- 3 TBSP lime juice - Add. Marinate for 90 min. in refrigerator
STEP TWO:
-- 1 batch of marinated shrimp (from step 1) - Place in mixing bowl
-- 4 TBSP diced tomatoes - Add.
-- 2 TBSP English cucumbers - Add.
-- 1 teaspoon jalapenos - Add.
-- 2 TBSP minced cilantro - Add.
-- 2.5 TBSP ketchup - Add.
-- 1 TBSP Valentia hot sauce - Add.
-- 1 TBSP reserved Ceviche marinade - Add. Mix thoroughly.
Take Ceviche from step 2. Place on tuna. Serve with unflavored tortilla chips.
