The Dish: Frito tailgate chili

RECIPE:

-- 5# ground beef
-- 1# ground sausage
-- 6 cups diced onion
-- 2 red bell peppers
-- 3 ea jalapeno
-- 1/2 cup garlic
-- 1 tbl onion powder
-- 1 tbl garlic powder
-- 3 tbl chili powder
-- 1 tbl paprika
-- 1 tbl cumin
-- 1 tbl coriander
-- 2 tsp cayenne
-- 1 can diced tomatoes
-- 2 beers
-- 4 cups chicken stock
-- 1 cup ketchup
-- 2 cups masa mixed with water

Sauté vegetables & beef in extra virgin olive oil until caramelized

Then briefly toast spices. Add tomatoes, chipotles, beer  & chicken stock. Simmer on low for 1 hour then whisk in mas & water mixture to thicken and season.

Top off with Fritos
