The Dish: Honey Cake

-RECIPE-

~ Lekach (Traditional Honey Cake) ~

Ingredients:

-- 1.75 cups honey
-- 1 cup strong brewed coffee or black tea
-- 4 eggs
-- 2 tablespoons vegetable oil
-- 1 cup sugar
-- 3.5 cups flour
-- dash salt (1/4 teaspoon for kosher salt, 1/8 for table salt)
-- 1 teaspoon baking soda
-- 2 teaspoons baking powder
-- 1 teaspoon allspice
-- 1 teaspoon cinnamon

-DIRECTIONS- 

1) Boil honey, let cool, then add coffee.

2) Beat eggs until light, then slowly blend in oil, then slowly beat in sugar.

3) Mix dry ingredients then add to the egg mix alternating between the dry mix and the wet mix (the honey and coffee mix). Mix till well incorporated between additions of dry and wet. Add raisins if desired.

4) Pour batter into oiled/sprayed loaf pans and bake for an hour at 325 (or 300 with convection oven)
