The Dish: Gourmet candy apples

Caramel "Apple Pie"
Ingredients
--1 cup of heavy cream
--3/4 cup of light corn syrup
--1/2 cup butter (room temperature)
--1 cup of sugar
--1 teaspoon of vanilla extract
--8 macintosh apples
--12 graham crackers
--Cinnamon
--Nutmeg
Directions-
Bake Apples:
Wash and dry apples. Lightly perforate the apples with a fork and bake at 350 for 15 minutes. Turn oven off, leaving apples in for another 10 minutes. Let rest for one hour before covering with caramel.
Basic Caramel:
Find a heavy-bottomed saucepan and over medium heat, cook 3/4 cup of the cream, the cornsyrup, butter, and sugar to 280 degrees F (firm ball); If possible use a candy thermometer toread temperature or stir until golden brown. Remove from the heat and carefully swirl in the remaining 1/4 cup of cream and the vanilla. Be Careful! this is very hot and it may splatter.
Graham Crackers:
Crumble the crackers with your hands or pulse with a food processor. Season crackers with nutmeg and cinnamon.
Making it all happen...
Insert a stick or a spoon into the cooked apples. Don't move it around too much because the apples are soft and the apple might fall off the spoon.
Holding by the stick over the caramel pan, pour the caramel and turn the apples at the same time. Make sure the caramel is still hot while you proceed with this step.
Roll caramel applesinto spiced graham crackers and set inside a cup cake liner.
