RECIPE:

Amount

5 Lbs Sweet Potatoes (8 each)

8 TBSP Butter

1 Cup Light Brown Sugar (packed)

Add 1/2 teas Salt

Add 1/2 teas Black pepper

Add 1/2 Cup Water

2 Cups Pecan Halves (hand broken)

1/2 Cups Light brown sugar (packed)

1 Each Egg white (lightly beaten)

Pinch Salt

Pinch Cayenne

Pinch Cinnamon

Directions

Place in a 400 degree oven and bake until tender- about 50 minutesRemove, cool

Peel, and dice 1" cubes.

Melt in a skillet

Add 1/2 teas Salt

Add 1/2 teas Black pepper

Add 1/2 5 Cup Water

Reduce in a skillet until the sauce has a syrup-like consistency

Mix the glaze with the sweet potatoes.

Set aside 2 Cups Pecan Halves (hand broken)

Place in a mixing bowl

Add 1/2 Cups Light brown sugar (packed)

Add 1 Each Egg white (lightly beaten)

Add Pinch Salt

Add Pinch Cayenne

Add Pinch Cinnamon

Mix together.

Heat oven to 450 degrees.

Place the sweet potatoes in a 13 x 9 dish.

Spread the topping over the potatoes

Bake until toasted and crisp- about 15 minutes.
