Five days into the New Year -- have you managed to keep your New Year's resolution? Most people last a couple of weeks, but 7News is trying to make it last a little longer with this great recipe to eat healthy! Julio Arevalo and Dylan Dreyer will show you how to hold on to your diet in a delicious way!

The Dish: Beet Quinoa Salad
The Cafe: Mt. Auburn Club
The Chef: Julio Arevalo

Ingredients:

-- 8 oz quinoa
-- 1 lb. organic beets
-- 1 tsp grain mustard
-- 1/2 cupt walnuts
-- 2 tsp parsley
-- 2 tsp lemon juice
-- 2 tsp honey
-- fresh cracked pepper
-- sea salt
-- 1/4 cup olive oil
-- parsley
-- cilantro

Directions:

-- Start with the cooked quinoa, mixed in the beets, mustard and add the walnuts.
-- Spoon in parsley, add lemon juice, mix in honey
-- Add pepper and sea salt to taste
-- Add olive oil
-- Garnish with parsley and cilantro
-- Serve and enjoy!
