The Super Bowl is set for Sunday, and if you're planning a party, this is the perfect dish to serve. It's a classy spin on chicken wings!

The Dish: Blue Corn Fried Chicken Wings

Blue Corn Fried Chicken Wings

Ingredients:

--8 pcs. Bone in chicken wings/thighs
--2 cups all-purpose flour
--2 cups blue corn meal
--2 cups buttermilk
--a large cast iron skillet for frying
--Approx. 2 cups vegetable oil
--1 tbsp. red achiote seeds
--salt and pepper to taste

Procedure:

1. Heat oil in skillet to 325 degrees.
2. Mix cornmeal, flour, salt and pepper and create a dredge in shallow dish.
3. Pour buttermilk into bowl and dredge the chicken first in the flour then in the buttermilk. Repeat twice.
4. Gently add the chicken thighs one at a time into the oil being careful not to overcrowd the skillet and fry to golden brown about 5 minutes per side.
5. Remove and season with salt and pepper and a squeeze of fresh lime.
6. Serve over white rice and gravy seasoned with red achiote seeds.
