Apple & Brie Crepe
Ingredients:
--1 cup all-purpose white flour
--1 cup buckwheat flour
--2 ½ cups whole milk
--1 teaspoon salt
--¼ teaspoon black pepper
--1 granny smith apple
--2 oz brie
-- melted butter
Procedure:
-Heat skillet on medium heat.
-Combine flours, salt, and black pepper in a mixing bowl. Set mixer on low and slowly add the milk. Blend on medium until there are no lumps and the consistency is comparable to light cream.
-Use a pastry brush to coat the skillet with melted butter. Pour about a half a cup of crepe batter onto the skillet and swirl the skillet to evenly coat the bottom with batter.
-While the first side of the crepe is cooking, thinly slice the apple and remove the rind from the brie.
-Carefully flip your crepe over trying not to rip it. Add the cheese first (so it melts nicely) to the middle of the crepe followed by the remaining ingredients. Allow to cook for about 2 minutes. Fold two sides over the center of the crepe forming a roll. Allow to cook through.
-Remove the crepe with a spatula and plate. This crepe pairs nicely with a fresh side salad.
