The Dish: Lemon Herb Roasted Cornish Game Hen

In honor of William & Kate’s one-year anniversary, we've got a dish to satisfy your royal hunger: Lemon Herb Roasted Cornish Game Hen.
Ingredients:
-- 1 tbs kosher salt
-- 2 tbs lemon pepper seasoning
-- 1 tbsp fresh chopped thyme
-- 1 tbsp fresh chopped rosemary
-- 2 tbsps olive oil
-- 6 Cornish game hens, rinsed, dried thoroughly
-- 3 whole lemon cut in half
-- 3 whole heads of garlic, split in half
-- 1 onion, diced coarsely
Method:
1) Preheat the oven to 375 degrees Fahrenheit .
2) In a small mixing bowl, stir together the salt, lemon pepper, thyme and rosemary. Rub the olive oil all over the hens and season each with the salt mixture.
3) Place the hens on a baking tray with plenty of space between them. You may need to use two trays. Loosely stuff the cavity of each hen with the chopped onions, garlic and lemon halves. Roast the hens in the preheated oven for about 35-40 minutes or until an instant-read thermometer inserted into the thickest part of the thigh registers 165F and the juices run clear. Remove from the oven, loosely tent with foil and let rest for 10 minutes before carving or serving.
As a nice accompaniment Cornish Hens can be served with roasted creamer potatoes and Steamed Asparagus to complete your meal.
