Homemade Granola
Ingredients:
--4 cups rolled oats
--1 cup wheat germ
--1 chopped walnuts
--¼ cup brown sugar
--1 teaspoon cinnamon
--¼ teaspoon salt
--1/3 cup vegetable oil
--1/3 cup honey
--1/3 cup water
Directions:
Heat the oven to 300¢ª. In a large mixing bowl, stir together the oats, wheat germ, nuts, brown sugar, cinnamon and salt.
Make a well in the dry ingredients and add the oil, honey and water. Toss the mixture until the ingredients are well combined, then spread it evenly on a cookie sheet.
Bake the granola for 40 minutes or until lightly browned, stirring every 10 minutes to keep the mixture from sticking. Let it cool completely.
Perfecto Olimpico
Ingredients:
--8 oz Blueberries
--8 oz Strawberries sliced
--8 oz Pineapple cubes
--8 oz Kiwi sliced
--12 oz Mascarpone
--¾ cup heavy cream
--½ cup confectioners' sugar
--8 oz Granola
Directions:
In a mixing bowl mix the mascarpone, heavy cream and confectioners' sugar, mix until medium-firm peaks form.
To assemble, drop a spoon full of mascarpone into 4 glasses. Next spoon in blueberries, pineapple, granola, kiwi, and strawberry and a spoonful of mascarpone between each level of fruit.
