The Dish: Redbones BBQ -- Baby back ribs with homemade glaze
CHEF ROBERT GREGORY
INGREDIENTS
Glaze 1:
1 cup Jack Daniel's Whiskey
1/2 cup dark brown sugar
1 cup ketchup
2 teaspoons Worcestershire sauce
1/4 cup vinegar
1 tablespoon lemon juice
3 cloves garlic, minced
1/2 teaspoon dry mustard
2 teaspoons onion powder
Salt and pepper to taste Glaze 2 (without alcohol):
1 cup ketchup
1/2 cup molasses
1/2 cup Dr Pepper
2 tablespoon Franks or tabasco
1/4 cup Orange Juice
1 tablespoon Mild chili powder
1 teaspoon dry thyme
1 teaspoon onion powder
2 teaspoon cumin
2 teaspoon black pepper
1 Tablespoon kosher salt
METHOD
Whisk Ingredients together. Cook your ribs ahead of time in an over or grill. When almost fully cooked remove and with a paint brush slather glaze on ribs (even chicken).
Put ribs back onto grill but avoid putting on direct flame, BE SURE to keep a close eye to them to prevent burning. They should only cook for 4-8 minutes, just long enough for glaze to cook and add flavor to ribs!Take off grill cut and ENJOY!!!
