The Dish: Cambridge One - Grilled lobster pizza

INGREDIENTS - Topping
5 oz. Lobster
4 oz. Parmesan Cheese
4 tablespoon Green Onion
1/2 cup Corn
1 tablespoon Cilantro
2 oz. Cilantro Oil
1 oz. Butter
Pizza Dough
5 oz. sugar
2 oz. vegetable oil
2 oz. yeast
3 oz. olive oil
12 lbs. flour
METHOD
-Mix salt and oils in a mixing bowl.
-Mix yeast with water and stir.
-Add water/yeast mixture to mixing bowl.
-Add flour to rest of mixture and mix/knead until it's the consistency of dough.
-Roll out dough using rolling pin.
-Cook one side of dough on grill, and flip.
-Apply cilantro oil, salt and pepper to cooked side of dough.
-Add cheese and allow to melt while you prepare next step.
-Sauté lobster/corn/scallions in 1 oz. butter for 30 seconds.
-Apply sautéed lobster mixture to dough.
-Cook on grill till you see smoke, remove pizza.
-Top with fresh cilantro.
-Trim edges and serve!
