The Dish: Salvatore's -- Shrimp crustini served on fresh bread

INGREDIENTS: Shrimp Crustini
2 oz extra virgin olive oil
12 large shrimp
3 oz brandy
24 oz canned cherry tomato
½ oz julienne basil
6 ea grilled crustini ½ inch thick
2 oz extra virgin olive oil
METHOD
Heat olive oil in a pan. Add shrimp, allow to cook until ½ done, drain oil. Add brandy, allow alcohol to burn off. Add cherry tomato. While shrimp is sautéing, place 6 crustini in center of plate. Spoon shrimp sauté over crustini. Garnish with extra virgin olive oil and basil.
