The Dish: Da Vinci -- Shrimp salad
The Chef: Peppino
INGREDIENTS:
2 tbl extra virgin olive oil (heat in sauté pan before adding ingredients)
1 oz. pancetta
10 each capers
1/4 oz. garlic
2 oz. tomatoes
3 leaves mint
6 each shrimp
2 oz. frisee
1 cup white wine
1/2 each lemon
METHOD:
- Prep items: dice pancetta, chop fresh garlic, slice baby cherry tomatoes in half, clean and devein shrimp, clean frisee with cold water and dry.
- Place frisee on center of plate.
- In pan, sauté pancetta, capers, fresh chopped garlic, fresh mint, white wine, pear tomatoes and fresh shrimp.
- Sauté for 3-4 minutes to cook the shrimp completely.
- Cut lemon in half and squeeze fresh juice in pan.
- Place all items on top of frisee salad on plate.
- Bon Appetito!
