Zaftig Balsamic Dressing
INGREDIENTS
1 tbsp. finely chopped garlic
1 ½ tbsp. chopped shallots
1 tbsp. ground white pepper
1 tbsp. kosher salt
1 cup orange juice
½ cup lemon juice
2 cups balsamic vinegar
2 tbsp. of dijon mustard
2 cups of olive oil
METHOD
First, mix well the garlic, shallot, white pepper, kosher salt, orange juice, lemon juice and balsamic vinegar. Then, add the two tablespoons of dijon mustard. Next, slowly drizzle the two cups of olive oil while constantly whisking to blend. Stir dressing well before each use.
Recipe makes six cups and can be refrigerated for up to one week.
Zaftig salad
INGREDIENTS
2 cups mixed field greens
2 oz. balsamic dressing
1 oz. feta cheese
1 oz. pine nuts, toasted
1 oz. golden raisins
6 ea. grape tomatoes
METHOD
Toss greens and dressing together. Top with feta cheese, pine nuts and raisins. Place three tomatoes on each side of the plate. Top with sliced grilled chicken.
