The Dish: Mantra -- Spiced Marinated Halibut

THE RESTAURANT: MANTRA IN DOWNTOWN BOSTON

THE DISH: SPICED MARINATED HALIBUT

INGREDIENTS:
10 oz. purple potatoes
1/2 tsp. cumin powder
1/2 tsp. coriander powder
10 oz. whole milk yogurt
2 tbsp. grain mustard
1 tbsp. lemon juice
1 pinch fresh cilantro
1/2 cup gram flour
1/2 tsp. ginger paste
1/2 tsp. garlic paste
To taste: Salt

METHOD:
In a bowl mix whole milk yogurt, ginger, garlic paste, cumin and coriander powder.  Add fresh lemon juice, grain mustard, gram flour, a pinch of fresh cilantro and salt to taste. Marinate halibut in mixture for at least 30 min.

Pan sear both sides of halibut, then finish in oven for 7-9 minutes.

For Potatoes: Boil purple potato, then peel and cut into small pieces. Sauté potato with chopped garlic and salt to taste.
