The Dish: A warm spinach salad

INGREDIENTS

2 spoons of virgin olive oil
1 spoon roasted garlic
1/2 pound baby spinach
Splash of white wine
Pinch of salt and pepper
1 ounce diced celery
6 red grape tomatoes cut in half
2 oz cilantro
3 spoons squeezed fresh lemon juice

METHOD

1. Set pan to medium heat. Put virgin olive oil and garlic in pan and mix for 1 minute.
2. Add baby spinach and sauté with splash of white wine for approximately 45 seconds, or until the edges of the spinach wilt.
3. Add salt, pepper, celery, grape tomatoes and cilantro. Sautee for 1 minute.
4. Add lemon juice and mix.
5. Serve with crostini or pita bread brushed with oil and garlic.
