The Dish: Chicken Fried Steak

Recipe yields 4 portions.

INGREDIENTS:
4 x 6 oz portions of Kobe flat iron steaks or tenderized cube steak
1½ cups all-purpose flour
1 tablespoon kosher salt
½ tablespoon black pepper
¼ tablespoon thyme (dried)
3 eggs
½ cup buttermilk
1 cup Japanese "Panko " breadcrumbs
1 cup of Italian seasoned breadcrumbs
Corn oil for shallow frying

METHOD:
1. Gather three medium size bowls.  In bowl one, combine flour, salt, black pepper and thyme.  In bowl two, combine eggs and buttermilk.  In bowl three, combine panko and seasoned Italian breadcrumb.

2. Place steaks on a paper towel to remove moisture.  Dip the steaks into the seasoned flour, coat lightly.  Then submerge floured steaks into the egg and buttermilk mixture. Then coat the steaks with breadcrumb mixture. Place steaks individually on platter (be careful not to stack on top of each other as this will remove the breaded mixture) and reserve for cooking. 

3. Heat corn oil to 350 degrees in a deep skillet at medium high heat. Carefully add breaded steaks to the skillet (do not overcrowd). Cook till golden brown about three minutes on each side for medium-rare, or longer depending on your preferred meat temperature.
