The Dish: Avila -- $30 Dinner
Dinner: Thyme crusted whole roasted chicken with roasted potatoes
Dessert: Caramelized Granny Smith apples over vanilla ice cream
Ingredients:
SALAD
1 lb. field greens
1 whole lemon
2 tsp. of olive oil
salt & pepper to taste
MAIN COURSE
1, 2 ½ lbs. whole chicken
2 lbs. of Yukon gold potatoes
½ bunch of fresh thyme
1 whole lemon
Pinch of salt
DESSERT
4 Granny Smith apples
1 Pint of vanilla ice cream
1/2 cup sugar
1/2 stick unsalted butter
Method:
For the salad:
Chop field greens and toss with squeezed lemon juice, olive oil and salt and pepper.
For the Chicken:
Preheat oven to 350 degrees. Rub whole chicken down with Olive Oil, Salt, Pepper, and Fresh Thyme. Place in roasting pan with potatoes and cook for approximately 1 hr and a half, until the thermometer reads 180 degrees.
For the Dessert:
Peel and quarter Granny Smith apples. Sautee in pan with butter and sugar for about 15 minutes. Place on top of vanilla ice cream.
