The Dish: Azure -- Apple Pie
A purchase of a $25 apple, pecan, pumpkin, or sweet potato pie baked by Boston's restaurants, caterers, and hotels -- all benefit Community Servings. The money raised from the sale of one pie allows Community Servings to provide a week's worth of meals to one of their clients or feed a family of five each day. The Dish: Apple Pie
Ingredients
Crust:
3 cups flour
½ cup sugar
1 tablespoon salt
1 ½ cups butter
1/4 cup cold water
Filling
6 cups apples
¾ cup packed brown sugar
½ cup sugar
1 tablespoon salt
1 tablespoon cornstarch
1 teaspoon allspice
1 tablespoon cinnamon
1 tablespoon lemon juice
Method
Crust:
Combine flour, sugar, salt and butter until mixture is course and crumbly, with pea size pieces of butter. Shape the dough into two flat rounds. Wrap in plastic wrap and refrigerate for at least 2 hours. Remove dough from refrigerator and lightly flour surface to roll it on. Roll the first half of the dough into 12 inch circle with ¼ inch thickness. Place onto a 9-inch pie plate. Gently press the pie dough down so that it lines the bottom and sides of the pie plate. Trim excess around edges. Roll second half of dough into a 12 inch circle and set aside.
Filling:
Peel, core and slice the apples. Mix brown sugar, sugar, salt, cornstarch, allspice and cinnamon in a large bowl. Stir in the apples and add lemon juice. Pour into pastry lined pie tray. Place second half of pie crust on top and seal the edges with a fork. Cut slits in the top. Bake at 350 degrees for 45 minutes.
