Recipe : Turkey Pot Pie
1 left over turkey, diced
1 cup mixed vegetables (carrots, onions, celery)
2 Potatoes diced
1 stick butter
½ cup flour
1 qt chicken stock
1 sheet pie pastry (available at supermarkets)
In a pot, melt butter and sauté vegetables until tender.
Add flour and cook on med heat for a few minutes.
Add stock and stir well. It will start to thicken as it heats.
Add potatoes and simmer a few minutes.
Add turkey and season with salt and pepper.
Pour mixture into a pyrex (oven safe bowl) and top with pie shell. Bake on a sheet tray in a 375 deg oven for 40 minutes.
