Cucumber & Cream Cheese
Slice peeled cucumbers paper thin. Spread white bread with room temp cream cheese, top with cucumbers, sea salt, and fresh ground black pepper. Top with other slice of bread, remove crusts and cut into small tea sandwiches.
Whip creme fraiche to soft peaks (take care to not over whip). Season with salt and pepper and add chopped fresh dill and chopped cornichons. Finish the creme with grated lemon zest. Spread on wheat bread and layer with smoked salmon. Top with other slice of bread, remove crusts and cut into small tea sandwiches.
Black Forest Ham & Gruyere
Slice ham thinly. Spread two brioche slices with whole grain mustard, top with grated Gruyere cheese and place ham on top. Place the two slices together and place on baking sheet. Brush bread with melted butter and bake til golden brown at 325 for 3-4 minutes.
