The Dish: Chocolate-filled sandwich cookies
Ingredients (Sugar Cookies)
Have all ingredients at 68 to 70 degrees.
In mixing bowl beat just until incorporated:
1/2 pound (2 sticks) butter
1 cup superfine sugar (or process regular sugar in food processor for 30 seconds)
1/2 teaspoon salt
Mix in until blended:
1 egg yolk
1 large egg
2 teaspoons vanilla
Stir in gently and mix just until incorporated:
2 1/2 cups flour
Pat onto a sheet of plastic wrap until about 1" thick. Wrap and put into refrigerator for 1 hour. Roll out on lightly floured counter or between parchment sheets to just under 1/4" thick. Freeze until firm. Cut into small rounds (about 1" in diameter). Bake for 8 minutes or until edges are browned and center is golden in pre heated 350 degrees
2 cups semi sweet morsels (good quality)
1/2 cup heavy cream- heated
Gently melt chocolate and stir in warm cream just until incorporated. The mixture should be left at room temperature to cool. When firm pipe onto cookies and top with cookie top.
Note: depending on the brand of chocolate it may need a bit more cream.
