The Dish: Scampo -- Spaghetti Pomodoro

Spaghetti Pomodoro with Peas
 
Ingredients:
¼ c olive oil
5 cloves garlic, minced
28 oz can diced tomatoes or tomato sauce
6 oz tomato paste
¼ c minced oregano 
1 T Capers
1 T Basil
1-2 T sugar
1 T black pepper

¼ c grated parmesan cheese

Grated Parmesan Cheese

Method:
Put the olive oil in a medium saucepan and sauté the garlic for 5 minutes.
Turn up the heat to high and add the tomatoes/tomato sauce and tomato paste. Mix well.
Add the sugar, then bring to a boil. Lower heat, add the oregano, capers, basil and black pepper. Cover, and let simmer for at least 15 minutes, stirring occasionally.

Lower heat, stir in cheese, and simmer for another 5 minutes or so. Taste and adjust seasonings.
Serve on top of Spaghetti mixed with green peas. Top with Parmesan cheese and black pepper.
