Recipe for 2 

INGREDIENTS
For the lemon crème fraiche:
1 cup crème fraiche
zest of ½ lemon
1/8 granulated sugar
Mix all ingredients and chill

For the pancake:
Ingredients: 4 whole eggs
½ cup milk
½ cup all purpose flour
¼ cup melted butter
1/8 tsp kosher salt
3 cups slice strawberries

2 sprigs fresh mint
4 tbs powdered sugar

METHOD
Place in blender eggs, milk, flour, butter, salt and mix until smooth. Preheat oven 425*
Heat 8" nonstick pan on medium heat then melt 1Tb butter to coat. Add 6 oz. batter
to hot pan and stir with spatula as if you are making scrambled eggs. When mixture
is half set place pan with the batter in oven to finish cooking. Bake until puffy and
golden along edges, about 6 minutes. Slide pancake onto warm plate, garnish with
1 1/2 cup strawberries, ½ cup lemon crème fraiche, mint sprig and powdered sugar.
Repeat procedure for next pancake or use two pans at same time.
