INGREDIENTS
Sushi Rice
1 cauliflower
2 tbsp rice vinegar
1 tspn salt

1/2 red bell pepper, cored
1/2 cucumber, peeled
4 shiitake, wiped clean and stemmed
1 tbsp cold pressed sesame oil
1/2 tspn salt

Nori
Avocado

METHOD
1. Core and clean the cauliflower. Shred it in a food processor and then dress it with the vinegar and salt and let sit for five minutes. Press out any excess liquid.

2. Cut all the vegetables in thick strips and dress with the oil and salt.

3. Place a nori sheet on a sushi mat. Spread with "rice", fill with the vegetable mix and avocado pieces and roll. Cut and enjoy!
