![]() | -- ¼ cup Sherry -- 3 cloves minced Garlic -- ¼ lb Butter -- 5oz Fresh Ginger -- 2 cups Soy Sauce -- ½ oz Wasabi Powder -- 46oz Pineapple Juice -- 1 Serrano Chili Procedure: -- In a small sauce pan over medium high heat combine 1 can of pineapple juice (46oz) with 2 cups of soy sauce, 5oz of peeled and sliced fresh ginger, ½ oz of wasabi powder and 3 chopped garlic cloves. Simmer for 15 minutes or until reduced by 1/8 in volume. Strain the sauce- place in a container and set aside. Best if set aside overnight. -- Julienne 2 Spanish onions, 1 red pepper, 1 yellow pepper and 1 green pepper. Mix together. -- To make the crust take 1/3 cup white sesame seeds and 1/3 cup black sesame seeds, 1tsp of salt and 1 tsp of pepper and combine together in a bowl. ![]() | ![]() -- Take 4 10oz Yellowfin Tuna steaks and evenly coat them with the crust and set aside. -- Use 2 saute pans over medium high heat, add ¼ cup olive oil. Take the crusted tuna steaks and carefully place them in one of the pans (be careful as the seeds tend to "jump" out). Sear the steaks for 2 minutes on each side. Remove from pan and set aside for a perfect medium rare. -- In the other hot pan add olive oil to coat pan. Place the vegetable mixture in the pan and sauté until all veggies are slightly caramelized. Add 2 tbsp of Sherry and reduce, then add ½ cup of strained ginger sauce. Thicken with cold butter (about 3tbsp). Remove veggies from the pan and place on the bottom of the serving plate. Place the seared Tuna steak onto of the veggie mixture.
