Batter:

-- Your wire wisk is the best kitchen tool for this process.
-- Break the eggs into a mixing bowl.
-- Mix well with a wire wisk until well blended.
-- Add brown sugar and vanilla.
-- Mix well again so that the sugar is broken down into the egg mixture.
-- Add the spices, nutmeg and cinnamon, and again mix well.
-- Add the cream and blend well.

Dip the sliced bread into the batter mixture (a tong holds the bread in place and allows the bread to be immersed in the batter for 20-30 seconds).

Place the battered bread on a buttered griddle (about 350 degrees or in a large frying pan , medium heat, prepared with a small amount of butter).

Give the toast 3 minutes to cook on each side.

Do not press the bread. It will brown lighty and maintain its volume.

Cut in half on the diagonal to serve.

A dollop of butter and some confectioner's sugar and maple syrup will top off your french toast just as we do at the diner!

Fresh fruit is a healthy side dish and complements the french toast flavors.
