![]() | --Balsamic vinegar --Cranberry juice --Atlantic salmon 8oz fillets Directions: 1. Gather all the ingredients and equipment (you will need 2 saucepans and an oven proof platter/dish). 1. Preheat oven to 450°F. 2. Place diced apples in saucepan with white wine. Cook on medium heat until wine is cooked off. Let cool 30 minutes. 3. Pour balsamic vinegar and cranberry juice into a second saucepan. Cook on medium heat until reduced to 1/3. Stir in ¼ cup cinnamon. Let cool 45 minutes and set aside. ![]() | ![]() 4. Mix together goat cheese, cooked apples, and ¼ cup cinnamon. Toss gently and set aside. 5. Place salmon fillet on sizzle platter. Cover with goat cheese mixture. 6. Bake for 10-12 minutes for medium temperature. 7. Plate salmon atop your favorite mashed potatoes and vegetable (we serve with asparagus). 8.
